Casserole Ingredients

  • 4 medium yellow squashes, sliced
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese because cheese makes everything better
  • 1 cup sour cream
  • 1 cup crackers (like Ritz or buttery doubles)
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring about an inch of water to a boil and add the sliced yellow squash and chopped onion. Boil for about 3-5 minutes until they start to soften. Drain and let cool.
  • In a large mixing bowl, combine the shredded cheddar cheese, sour cream, milk, and melted butter. Stir until well blended.
  • Add the drained squash and onion to the cheese mixture. Season with salt and pepper.
  • Pour the cheese-coated mixture into a greased casserole dish.
  • Crush the crackers and sprinkle them on top.

Cooking

  • Bake the casserole in the oven for about 25-30 minutes or until bubbly and golden brown on top.

Notes

You can use panko breadcrumbs or crushed tortilla chips for the topping. Assemble the casserole ahead of time and bake when ready. Frozen squash can be substituted, just thaw and drain well before use.
