Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar

For the filling

  • 16 ounces cream cheese, softened
  • 1 cups smooth peanut butter
  • 1 cups powdered sugar
  • 8 ounces white chocolate, melted and slightly cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract

For garnish

  • Whipped cream Can use store-bought
  • White chocolate shavings
  • Chopped peanuts (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together your graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
  • Press this mixture firmly into the bottom of a 9-inch springform pan.
  • Bake in the preheated oven for 8–10 minutes until golden brown and fragrant. Let it cool.

Make the Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add in your peanut butter and powdered sugar, mixing until combined.
  • Slowly drizzle in the melted white chocolate while continuing to mix.
  • Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Stir in the vanilla extract.

Bake the Cheesecake

  • Pour the filling over your cooled crust and spread it evenly.
  • Bake in the preheated oven for 50–60 minutes, or until the center is set but still jiggles slightly.
  • Turn off the oven, crack the door open, and let it cool inside for about an hour.

Chill

  • Transfer the cheesecake to the fridge and let it chill for at least 4 hours (or overnight).

Garnish & Serve

  • Before serving, whip up some cream and spread it over the cheesecake.
  • Top with white chocolate shavings and chopped peanuts.

Notes

Don't worry if your crust isn't perfect—that's what makes it homemade! For quicker melting of white chocolate, chop it into small pieces before microwaving in short bursts, stirring in between. You can also swirl in some chocolate or caramel sauce before baking for extra flavor.
