Warming Italian Broccoli Soup

Ingredients
  

Vegetables

  • 1 large head broccoli, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced Add more if you like garlic.
  • 1 medium potato, peeled and diced For creaminess.

Liquids

  • 4 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream (or coconut milk) For a dairy-free option.

Seasonings

  • to taste salt
  • to taste pepper
  • sprinkle red pepper flakes Optional for spiciness.

  • olive oil for sautéing
  • fresh parsley for garnishing Because we eat with our eyes first!

Instructions
 

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat. Toss in the diced onion and garlic, sautéing until the onions are translucent and fragrant.
  • Add in the chopped broccoli and diced potato. Give everything a good stir to coat the veggies.

Cooking

  • Pour in the vegetable or chicken broth, bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the broccoli and potatoes are tender.
  • Use an immersion blender to blend the soup until smooth and creamy, leaving some broccoli bits for texture if desired.
  • Return the soup to low heat, and stir in the heavy cream or coconut milk. Add salt, pepper, and red pepper flakes to taste. Let it simmer for another 5 minutes.

Serving

  • Dish up the warm soup into bowls, garnish with fresh parsley, and serve with crusty bread.

Notes

For extra flavor, don’t skimp on the garlic! You can try adding spinach or kale for a veggie boost. Pair this soup with a salad or grilled cheese for a complete meal.
