Ingredients

For the Cupcakes

  • 1 pound ground beef (or ground turkey if you’re feeling healthier)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup salsa (homemade or store-bought)
  • 1 can refrigerated biscuit dough (the flaky kind that pops when you open it)

For the Toppings

  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ½ cup sour cream (or Greek yogurt for a healthier twist)
  • sliced jalapeños (optional, for a spicy kick)

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and stir in the taco seasoning according to package directions. Add salsa and cheese, mixing until well combined.
  • Lightly grease a muffin tin.
  • Open the can of biscuit dough and separate the biscuits. Press one biscuit into each muffin cup to form a cup shape.
  • Spoon the taco beef mixture into each biscuit cup, filling them nicely but not overflowing.
  • Bake in the preheated oven for about 12-15 minutes, or until the dough is golden brown.
  • Carefully remove from the tin and let cool slightly before adding toppings.
  • Top with shredded lettuce, diced tomatoes, sour cream, and jalapeños if desired. Serve and enjoy!

Notes

Feel free to switch out ingredients based on your family’s preferences. Prepare the beef mixture ahead of time for quick assembly and baking later.
