Ingredients

Main Ingredients

  • 4 cups cucumbers, sliced Or use whole cucumbers if you’re feeling ambitious
  • 2 cups apple cider vinegar For that zingy flavor
  • 1 cup sugar The secret to the sweetness!
  • 1 tablespoon mustard seeds Adds a nice crunch
  • 1 tablespoon crushed red pepper flakes To bring the heat
  • 1 teaspoon salt For balance
  • 1 teaspoon garlic powder Because, why not?

Instructions

Preparation

  • Wash your glass jars thoroughly and sterilize by boiling them in water for about 10 minutes.
  • Slice your cucumbers to your desired thickness for more surface area.
  • In a medium saucepan, combine apple cider vinegar, sugar, mustard seeds, crushed red pepper flakes, salt, and garlic powder. Bring to a gentle boil, stirring occasionally until the sugar dissolves.
  • Pack the sliced cucumbers tightly into the prepared jars and pour the brine over them, ensuring they are fully submerged.
  • Let the jars cool to room temperature before sealing and refrigerating them. The pickles will be ready to enjoy in a couple of days, but even better after a week.

Notes

Customization is key; feel free to adjust the heat and sweetness to your taste. These pickles can last for up to 2 months in the fridge if stored properly.
