Ingredients
  

Main Ingredients

  • 1 lb ground beef (or turkey) Choose turkey for a leaner option
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium bell peppers, chopped Use any color you love
  • 1 can (14 oz) diced tomatoes (with liquid)
  • 1 cup corn Fresh, frozen, or canned
  • 1 cup beef or vegetable broth
  • 1 cup water
  • 1 tsp Italian seasoning Essential for flavor
  • Salt and pepper to taste
  • 1 cup cooked rice (optional) Adds heartiness
  • Fresh parsley for garnish Adds a pop of color

Instructions
 

Preparation

  • In a large pot over medium heat, brown the ground beef (or turkey) for about 5-7 minutes.
  • Add the chopped onion and garlic and cook until the onion becomes translucent and fragrant.

Cooking

  • Toss in the chopped bell peppers and sauté for another couple of minutes until slightly soft.
  • Stir in the diced tomatoes with their juice, corn, broth, water, Italian seasoning, salt, and pepper.
  • Bring the mixture to a boil, then lower the heat and let it simmer for about 20 minutes.

Finishing Touches

  • If using rice, stir it in now and allow it to heat through.
  • Taste the soup and adjust seasoning if necessary. Ladle into bowls and top with fresh parsley.

Notes

Add other veggies like carrots or zucchini if desired. A dash of hot sauce can add some kick.
