Ingredients
  

For the Chicken

  • 1.5 pounds boneless, skinless chicken thighs
  • cup honey
  • cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon minced fresh ginger or a pinch of ground ginger

For the Veggies

  • 2 cups mixed vegetables (bell peppers, broccoli, carrots—your choice!)
  • 1 cup onions, sliced
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Preparation

  • Place the chicken thighs in your slow cooker.
  • In a bowl, whisk together the honey, soy sauce, minced garlic, and ginger.
  • Drizzle the honey garlic mixture over the chicken in the slow cooker.
  • Layer the mixed veggies and sliced onions over the top. Give everything a gentle stir to ensure the chicken is covered in the sauce.

Cooking

  • Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours.

Serving

  • Once cooked, shred the chicken right in the slow cooker, mix everything up, and serve over rice or noodles. Toss on some sesame seeds if you're feeling fancy.

Notes

If short on time, prep everything the night before. This recipe can be a one-pot meal by serving it over rice or adding cooked noodles in the last 30 minutes. If the sauce looks lumpy, that’s perfectly normal!
