  • 2 pieces lamb shanks (about 2 lbs total)
  • 2 tablespoons olive oil
  • 1 onion chopped onion
  • 2 pieces carrots, diced
  • 2 cloves garlic cloves, minced
  • 2 cups beef or chicken broth
  • 1 cup red wine (optional) Highly recommended
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 leaf bay leaf

Preparation

  • Generously sprinkle salt and pepper over the lamb shanks.
  • In a large skillet, heat your olive oil over medium-high heat. Brown the lamb shanks on all sides for about 3-4 minutes each. Set them aside.
  • In the same skillet, sauté the chopped onion and carrots until the onions become translucent, about 5 minutes. Add the minced garlic and cook for about 1 more minute.
  • Pour in the red wine (if using) and scrape up any browned bits from the bottom of the skillet.
  • Transfer the vegetable mixture to the slow cooker. Add the broth, rosemary, thyme, bay leaf, and nestle the lamb shanks into the pot.

Cooking

  • Cover the slow cooker and set it on low for 6-8 hours.

Notes

Let the lamb shanks rest for about 10-15 minutes before serving to allow the juices to redistribute. If the gravy is too thin, thicken it with a cornstarch slurry. Serve alongside creamy mashed potatoes or a fresh salad.
