  • 2 pounds beef chuck roast
  • 2 cups yellow onions, thinly sliced
  • 1 cup cremini or button mushrooms, sliced
  • 4 cups beef broth
  • 1 cup dry white wine or more beef broth
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 teaspoons fresh thyme
  • 1 leaf bay leaf
  • Salt and pepper, to taste
  • 4 slices crusty bread like French or sourdough
  • 1 cup grated Gruyère cheese

Instructions
 

Searing the Beef

  • Heat the olive oil in a large, heavy pot over medium-high heat. Season the beef chuck roast with salt and pepper. Sear the beef on all sides until it develops a perfect brown crust—about 3-4 minutes per side. Remove the beef and set it aside.

Sautéing Onions and Mushrooms

  • In the same pot, add the butter, then toss in the onions, mushrooms, and garlic. Cook until the onions are golden and caramelized—about 10-15 minutes.

Deglazing the Pot

  • Pour in the white wine (or more beef broth if you prefer!) and scrape up those tasty brown bits stuck to the bottom of the pot. Let it simmer for a few minutes to reduce slightly.

Braising Time

  • Return the beef to the pot. Add the beef broth, thyme, and bay leaf, then bring to a simmer. Cover and reduce the heat to low. Let it braise for about 2.5 to 3 hours, or until the beef is fork-tender.

Preparing the Gruyère Toast

  • While the beef is simmering away, preheat your oven to 400°F (200°C). Place the slices of crusty bread on a baking sheet. Top each slice with a generous amount of grated Gruyère cheese. Bake until the cheese is melting and bubbling—about 5-7 minutes.

Serving

  • Once the beef is ready, shred it with two forks in the pot. Serve the savory braised beef on top of the cheesy toast.

Notes

Tips: Slow and steady wins the race; don’t rush the braising. You can also substitute Gruyère cheese with Swiss or provolone if needed. This dish tastes even better the next day.
