Savory Beef Lo Mein with Vegetables

Ingredients
  

Noodles

  • 8 ounces lo mein noodles or any noodles you have on hand

Beef

  • 1 pound flank steak, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce adds magical flavor!

Vegetables

  • 1 cup broccoli florets
  • 1 unit bell pepper, sliced (red or yellow) for extra color
  • 1 medium carrot, julienned or chop as desired
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 green onions, sliced for garnish because we eat with our eyes, too!

Oil

  • 2 tablespoons vegetable oil

Instructions
 

Preparation

  • Cook the lo mein noodles according to package instructions. Drain and set aside.
  • Combine the sliced flank steak with soy sauce and oyster sauce in a bowl and marinate while prepping the vegetables.

Cooking

  • Heat the vegetable oil in a large skillet or wok over medium-high heat and stir-fry the marinated beef for about 3-4 minutes until browned.
  • Add broccoli, bell pepper, carrot, garlic, and ginger to the skillet and stir-fry for another 3-4 minutes until veggies are vibrant but still crunchy.
  • Toss the cooked noodles into the skillet and mix everything together; let it cook for another 2 minutes.

Serving

  • Serve hot, topped with sliced green onions.

Notes

This dish keeps well in the fridge for a couple of days. You can also substitute the protein with chicken, shrimp, or tofu. If the sauce looks lumpy, stir it well.
