Main Ingredients

  • 1 can 1 can (14.75 ounces) of salmon, drained and flaked
  • 1/2 cup 1/2 cup breadcrumbs Panko works wonders!
  • 1/4 cup 1/4 cup finely chopped onion
  • 2 tablespoons 2 tablespoons mayonnaise
  • 1 tablespoon 1 tablespoon Dijon mustard
  • 1 teaspoon 1 teaspoon garlic powder
  • 1 teaspoon 1 teaspoon dried dill Or a pinch of whatever herbs you have
  • to taste Salt and pepper
  • 1 large 1 large egg, beaten
  • as needed Oil for frying Olive or vegetable oil are good choices

Instructions
 

Preparation

  • In a large bowl, combine the flaked salmon, breadcrumbs, chopped onion, mayonnaise, Dijon mustard, garlic powder, dried dill, salt, and pepper. Mix well with a fork to ensure all ingredients are combined.
  • Add in the beaten egg to help bind the mixture together.
  • Shape the mixture into patties, approximately 2-3 inches in diameter.

Cooking

  • In a skillet, heat a tablespoon of oil over medium heat.
  • Once hot, place the salmon patties in the pan and cook for about 4-5 minutes on each side until golden and crispy.
  • Remove the patties from the pan and place them on a paper towel to absorb excess oil.
  • Serve with a squeeze of lemon or your favorite dipping sauce.

Notes

Don't skip the breadcrumbs for texture and form. You can customize with different spices or add shredded vegetables. These patties freeze well; make a double batch for busy nights.
