Ingredients
  

For the Roasted Carrots

  • 1 lb carrots, peeled and cut into thin strips
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Maple Ricotta

  • 1 cup ricotta cheese
  • 2 tablespoons maple syrup
  • 1 each Zest of 1 lemon
  • A pinch of salt

For the Spiced Butter

  • 4 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon cayenne pepper more if you’re feeling adventurous!

Preparation

  • Preheat your oven to 400°F (204°C). Grab a baking sheet and toss the carrot strips in olive oil, salt, and pepper until evenly coated.

Roasting

  • Spread the carrots in a single layer on the baking sheet and roast for about 25-30 minutes or until they are tender and caramelized.

Maple Ricotta

  • In a mixing bowl, combine the ricotta, maple syrup, lemon zest, and a pinch of salt. Stir until well combined.

Spiced Butter

  • Melt the butter in a small saucepan over medium heat. Add cinnamon, nutmeg, and cayenne, stirring until bubbling.

Assembly

  • On a serving plate, spoon a generous dollop of the maple ricotta, add the roasted carrots, and drizzle with spiced butter.

Notes

Try adding different spices to the butter, such as smoked paprika or garlic. This recipe also works well with parsnips or sweet potatoes. Keep an eye on the carrots while roasting to avoid burning.
