For the Cake

  • 1 box white cake mix
  • 3 large eggs
  • 1 cup water
  • 1 tsp vanilla extract

For the Poke Filling

  • 1 cup sweetened condensed milk
  • ½ cup strawberry flavored gelatin for vibrant red streaks

For the Toppings

  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 2 cups whipped topping store-bought or homemade
  • sprinkles optional, for extra flair

Instructions

Baking the Cake

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the white cake mix, eggs, water, and vanilla extract. Mix until well blended.
  • Pour the batter into a greased 9×13 inch baking dish.
  • Bake for 30-35 minutes or until a toothpick comes out clean.

Create the Poke

  • Remove the cake from the oven and let it cool for about 15-20 minutes.
  • Poke holes all over the cake using a fork.
  • In a small bowl, whisk together the sweetened condensed milk and strawberry gelatin until fully dissolved.
  • Pour this mixture over the poked cake, ensuring that it seeps into the holes.

Top It Off

  • Let the poke cake cool completely in the fridge for at least 2 hours.
  • Spread the whipped topping over the cake, arranging the sliced strawberries and blueberries on top.
  • Add sprinkles if desired.

Notes

Experiment with different fruits or flavors of gelatin for variations. Store leftovers in the fridge; it lasts about 3-4 days.
