  • 1 teaspoon vanilla extract Essential for a lovely aroma.
  • 1 teaspoon cinnamon For added warmth and spice.
  • Optional raisins, nutmeg, or fresh fruit For garnish and variation.

Preparation

  • Rinse the rice under cold water until the water runs clear.
  • In a large pot, combine the rinsed rice, milk, sugar, and salt. Bring to a gentle boil over medium heat, stirring often.

Cooking

  • Once bubbling, lower the heat and let it simmer for about 20 minutes, or until the rice is tender.
  • In a small bowl, whisk the beaten eggs and gradually add in a spoonful of the hot rice mixture to temper the eggs.
  • Pour the egg mixture back into the pot and stir continuously for 2-3 minutes until it thickens.
  • Add in the vanilla extract, cinnamon, and any additional spices you like.

Finishing Touches

  • Remove the pot from heat and let the rice pudding cool slightly. Serve warm or chilled, topped with nutmeg or fresh fruit.

Notes

If the pudding is too thick, add a splash of milk to reach the desired creaminess. Add raisins or other dried fruits when mixing in the egg for added flavor.
