No Bake Turtle Mini Cheesecakes

These mini cheesecakes are easy to make require no baking, featuring a graham cracker crust, a creamy filling, and topped with caramel, chocolate, and pecans.

Ingredients
  

For the Crust

  • 1 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

For the Topping

  • 1 cup caramel sauce
  • 1/2 cup chocolate sauce
  • 1/2 cup chopped pecans

Instructions
 

Preparation of the Crust

  • In a medium-sized bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
  • Spoon the crust mixture into mini cheesecake cups or muffin tins, pressing firmly into the bottom.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese until it's smooth and creamy.
  • Gradually add powdered sugar and vanilla extract, mixing until well combined.
  • Gently fold in the whipped topping until everything is harmoniously blended.

Assemble the Mini Cheesecakes

  • Spoon the cheesecake filling on top of each crust and smooth it out.
  • Cover the mini cheesecakes with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.

Top It Off

  • When you’re ready to serve, drizzle the caramel and chocolate sauce on top of each cheesecake.
  • Finish with a sprinkling of chopped pecans.

Notes

Store leftovers in the fridge for up to 5 days in an airtight container. Can substitute cream cheese with mascarpone or Greek yogurt for a different flavor.
