Ingredients
  

Main Ingredients

  • 1 cup graham cracker crumbs
  • 1 cup shredded coconut (toasted optional)
  • 1/2 cup chopped pecans or walnuts (or a mix) Can use a mix of nuts for a different flavor.
  • 1/2 cup creamy peanut butter (or almond butter) Almond butter can be used for a healthier option.
  • 1/4 cup honey or maple syrup Maple syrup can make the recipe vegan.
  • 1/2 cup semi-sweet chocolate chips The primary ingredient for coating.
  • 1 tablespoon coconut oil Used to help melt the chocolate.

Preparation

  • In a large bowl, combine the graham cracker crumbs, shredded coconut, nuts, peanut butter, and honey. Mix until fully combined.

Forming Cookies

  • Press the mixture into small rounds on a parchment-lined baking sheet, aiming for about 1 inch in diameter.

Melting Chocolate

  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until smooth.

Coating Cookies

  • Dip each cookie in the melted chocolate or drizzle on top.

Chilling

  • Place the chocolate-coated cookies in the fridge for about 30 minutes or until the chocolate has set.

Notes

Feel free to sprinkle extra coconut or nuts on top of the chocolate while it’s still warm. Can substitute honey with agave nectar for a vegan option. These cookies can be made ahead of time and shaped later.
