  • 4 pieces boneless, skinless chicken breasts
  • 3 cups assorted vegetables (bell peppers, zucchini, red onion, cherry tomatoes)
  • 3 tablespoons olive oil the liquid gold that makes everything taste better
  • 2 teaspoons dried oregano for that authentic Mediterranean vibe
  • 1 teaspoon garlic powder because who doesn’t love garlic?
  • to taste salt and pepper seasoning is key
  • 1 piece lemon juice of 1 lemon for zesty goodness

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Chop your veggies into bite-sized pieces.

Seasoning

  • In a bowl, mix olive oil, dried oregano, garlic powder, lemon juice, salt, and pepper. Toss the chicken breasts in this mixture.

Arranging

  • Place the seasoned chicken in the center of a baking sheet and surround it with the chopped vegetables.

Cooking

  • Bake the chicken and vegetables for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F. Optionally, increase the heat for the last 5 minutes to caramelize.

Serving

  • Remove from the oven, let cool for a minute, and serve hot, optionally drizzled with extra lemon juice.
