Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-Ins

  • 1 cup semi-sweet chocolate chips
  • 1 cup maraschino cherries, chopped (drained and patted dry) Fresh cherries can be substituted.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually stir the dry mixture into the butter mixture until well combined.
  • Fold in the semi-sweet chocolate chips and chopped maraschino cherries.

Baking

  • Drop rounded tablespoons of dough onto a lined baking sheet, leaving space for spreading.
  • Bake for 10-12 minutes or until edges are slightly golden.

Cooling

  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Use fresh cherries for a more vibrant flavor. Adding a small amount of orange zest can enhance the taste. Don't overbake; the cookies should be soft in the center.
