Ingredients
  

For the Quesadillas

  • 1 lb steak (flank steak or sirloin)
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 medium bell pepper, sliced
  • 1 small onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper

  • Salsa
  • Sour cream
  • Fresh cilantro (optional)

Instructions
 

Cooking the Steak

  • In a skillet over medium-high heat, add a tablespoon of olive oil. Rub your steak with cumin, paprika, salt, and pepper. Cook for about 4-5 minutes on each side for a medium finish.
  • Once your steak is beautifully browned and cooked to your liking, let it rest for about 5 minutes. Then, slice it into thin strips.

Sauté the Veggies

  • In the same skillet, toss in the sliced bell pepper and onion. Cook until they are softened and slightly caramelized, about 5 minutes.

Assemble Quesadillas

  • On one half of a tortilla, sprinkle a generous portion of shredded cheese, followed by a layer of steak strips and sautéed veggies. Fold the tortilla in half.

Cook the Quesadillas

  • Wipe the pan clean and return it to medium heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side until golden-brown and crispy.

Serve

  • Slice the cooked quesadillas into wedges and serve with salsa and sour cream on the side.

Notes

You can use pre-cooked steak or leftovers to save time. Don’t skimp on the cheese as it's essential for holding the quesadillas together. Feel free to switch up the veggies based on your preference.
