Ingredients

  • 0.5 cups fresh lime juice Juice from about 4 limes.
  • 2 limes zest of 2 limes For additional lime flavor.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 0.25 oz unflavored gelatin To help set the cheesecake.

For the Lime Glaze

  • 0.5 cups powdered sugar For sweetness in the glaze.
  • 2 tablespoons lime juice To flavor the glaze.
  • 1 tablespoons water To thin the glaze.

Preparation

  • In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until moistened. Press into the bottom of a springform pan and set aside.
  • In a small bowl, dissolve unflavored gelatin in 1/4 cup of warm water and let sit for about 5 minutes.

Making the Filling

  • In a large mixing bowl, beat cream cheese until smooth.
  • Gradually add sweetened condensed milk, heavy cream, lime juice, lime zest, and vanilla extract; mix until combined.
  • Gently fold in the gelatin mixture into the cream cheese filling.

Assembly

  • Pour the filling over the crust and smooth the top.
  • Cover and refrigerate for at least 4 hours or until set.

Glaze Preparation

  • Whisk together powdered sugar, lime juice, and water until smooth.

Serving

  • Once set, remove the cheesecake from the springform pan, drizzle with lime glaze, and add lime slices for garnish.

Notes

To get the most juice from your limes, roll them on the countertop before cutting. This cheesecake can be made a day ahead for improved flavor.
