Ingredients
  

For the Filling

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup jalapenos, diced (fresh or pickled) Add more for extra heat
  • 1/4 cup green onions, chopped

For the Egg Rolls

  • 1 package egg roll wrappers
  • Oil for frying vegetable or canola
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapenos, and green onions. Mix until blended and season with salt and pepper to taste.

Assembly

  • Lay an egg roll wrapper flat and place about 2 tablespoons of filling near one corner. Fold the corner over, roll tightly while folding in the sides, and seal the edge with water.
  • Repeat the process until all filling is used or you run out of wrappers.

Cooking

  • Heat oil in a frying pan over medium heat. Fry egg rolls for about 3-4 minutes on each side until golden brown and crispy.
  • Remove from oil and drain on paper towels.

Serving

  • Serve hot with your favorite dipping sauce.

Notes

For baking, brush with olive oil and bake at 400°F (200°C) for 12-15 minutes. You can prepare the filling ahead of time and freeze assembled egg rolls.
