Ingredients
  

For the crispy shell

  • 2 cups all-purpose flour
  • 4 tablespoons ghee or unsalted butter, melted
  • 1/2 teaspoon salt
  • Water as needed Water, as needed To form the dough

For the filling

  • 1 pound ground chicken
  • 1 medium onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1 inch piece ginger, grated
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional) For garnish
  • Oil Oil for frying

Instructions
 

Make the Dough

  • In a large bowl, mix the flour, ghee, and salt. Gradually add water until the dough comes together. Knead until smooth.

Prepare the Filling

  • In a skillet over medium heat, cook the onions until soft. Add garlic and ginger, then the ground chicken and spices. Cook until the chicken is no longer pink.

Assemble the Samosas

  • Roll out the rested dough into thin circles, cut in half, fold to form a cone, fill with chicken mixture, and seal the top.

Fry 'Em Up

  • Heat oil in a frying pan and fry the samosas until golden brown and crispy, about 5-7 minutes.

Serve and Indulge

  • Drain on paper towels and serve hot with chutney or sauce for dipping.

Notes

For extra crunch, double fry the samosas. You can freeze them uncooked and fry directly from the freezer.
