  • 3 cups Apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon (and extra for topping)
  • 2 large Eggs
  • 1/2 cup Unsalted butter, melted Butter makes everything better
  • 1 teaspoon Vanilla extract
  • 1/2 cup Milk
  • 1/4 cup Brown sugar (for topping) For a caramelized crust

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon. Whisk to incorporate.
  • In a separate bowl, beat the eggs lightly, then add melted butter, vanilla extract, and milk. Whisk until well combined.
  • Pour the wet mixture into the dry ingredients and gently fold together. Do not overmix.
  • Fold in the diced apples and add more cinnamon if desired.
  • Pour the batter into a greased 9x13 inch baking pan and smooth out the top.
  • Sprinkle brown sugar and a pinch more cinnamon over the top.

Baking

  • Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool before slicing. Serve warm, ideally with whipped cream or vanilla ice cream.

Notes

Choose your apples wisely—Granny Smiths add tartness, while Honeycrisps add sweetness. Letting the cake cool helps with slicing.
