Hearty Cabbage Soup

Ingredients
  

Vegetables

  • 1 medium head of green cabbage, chopped
  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 3 cloves of garlic, minced

Liquids

  • 4 cups of vegetable or chicken broth Use whichever suits your palate.
  • 1 can (14 oz) of diced tomatoes, undrained

Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Optional Ingredients

  • 1 cup of beans (cannellini or kidney) For added protein.
  • Fresh parsley for garnish For presentation and flavor.

Preparation

  • Start by chopping your cabbage, dicing the onion, slicing the carrots, and mincing the garlic.

Cooking

  • In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add the onion and carrot, and sauté until the veggies are soft and the onion is translucent, about 5-7 minutes.
  • Add in the minced garlic and cook for another minute.
  • Stir in the chopped cabbage and allow it to wilt down for about 5 minutes.
  • Add the vegetable or chicken broth and the can of diced tomatoes (juice and all). Stir well, then sprinkle in the thyme and paprika. Toss in a pinch of salt and pepper for seasoning.
  • Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 30 minutes.
  • If you wanted to add beans for extra protein, toss them in during the last 5 minutes to heat through.
  • Ladle your lovely Hearty Cabbage Soup into bowls, garnish with fresh parsley, and serve.

Notes

You can always blend the soup for a smooth texture, or keep it chunky based on personal preference. Add red pepper flakes for some heat.
