Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract (optional)

For the Frosting

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together flour, sugar, baking soda, and salt until well combined.
  • Add in the crushed pineapple (juices included), vegetable oil, eggs, vanilla extract, and coconut extract. Mix until just combined.
  • Pour your batter into a greased 9x13 inch baking pan and bake for 30-35 minutes, or until a toothpick comes out clean.

Making the Frosting

  • In another bowl, combine heavy whipping cream, powdered sugar, cream cheese, and vanilla extract. Beat until soft peaks form.

Frosting and Serving

  • Once your cake has cooled completely, spread the frosting generously on top.
  • Slice up your Hawaiian Pineapple Cake and serve.

Notes

This cake tastes better the next day. Feel free to add chopped macadamia nuts or substitute Greek yogurt for cream cheese.
