Main Ingredients

  • 2 cups cooked chicken, shredded Leftovers work great!
  • 1 cup pineapple chunks Can be canned or fresh
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/3 cup sliced almonds Or walnuts, if preferred

Dressing

  • 1 cup Greek yogurt Or mayonnaise, if preferred
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

For Serving

  • Mixed greens Optional, for serving

Preparation

  • Shred your cooked chicken if you haven’t done so already.
  • In a large bowl, whisk together the Greek yogurt, honey, lime juice, salt, and pepper to make the dressing.
  • Add the shredded chicken, pineapple chunks, diced red bell pepper, chopped red onion, celery, and sliced almonds to the dressing.
  • Gently mix everything together until all ingredients are fully coated in the dressing.
  • Taste and adjust the seasoning as necessary.
  • Serve on its own or over a bed of mixed greens.

Notes

Use leftover rotisserie chicken for great flavor and time-saving. Feel free to swap out the pineapple for mango or apples, and add diced apples or crispy bacon bits for extra crunch.
