  • 12 cups popped popcorn (about 1 cup kernels)
  • 1 cup unsalted butter
  • 2 cups packed brown sugar
  • 1 cup light corn syrup
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts or candy corn (optional) For extra festive touch

Preparation

  • Pop that corn! If you're using stovetop kernels, heat them in a large pot with a bit of oil, shaking occasionally until you hear the popping slow down. If using microwave popcorn, follow the package instructions. Set aside in a large bowl.
  • Make the caramel sauce. In a medium saucepan, melt the butter over medium heat. Once melted, stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly. Let it boil for 4-5 minutes without stirring.
  • Get bubbly. Remove the saucepan from heat and quickly add the baking soda and vanilla extract. Stir until smooth.
  • Combine! Pour the hot caramel sauce over the popcorn in your large bowl. Gently toss the popcorn to coat evenly. Add nuts or candy corn if desired.
  • Bake to perfection. Preheat your oven to 250°F (120°C). Spread the caramel-coated popcorn onto a baking sheet lined with parchment paper. Bake for 1 hour, stirring every 15 minutes.
  • Cool down. Once it's done baking, let it cool completely before breaking it apart into chunks.

Notes

Make the popcorn ahead of time and prepare the caramel sauce when you're ready. Experiment with different add-ins like chocolate chips or dried fruit for a twist. Store in an airtight container for up to a week.
