Ingredients
  

For the Crostini

  • 1 French baguette French baguette, sliced
  • 1/4 cup olive oil
  • to taste Salt and pepper

For the Beef

  • 1 lb beef tenderloin, trimmed
  • 2 tablespoons Dijon mustard
  • to taste Salt and pepper

For the Béarnaise Sauce

  • 1/2 cup white wine
  • 1/4 cup white wine vinegar
  • 1/4 cup chopped fresh tarragon
  • 3 pieces egg yolks
  • 1/2 cup unsalted butter, melted

Instructions
 

Preparation

  • Preheat your grill to medium-high heat.
  • Brush the slices of baguette with olive oil and season lightly with salt and pepper.
  • Grill the baguette slices for about 2 minutes per side until golden brown, then set aside.
  • Season the beef tenderloin generously with salt and pepper, then slather on the Dijon mustard.

Grilling

  • Place the seasoned tenderloin on the grill and cook for about 6-7 minutes on each side for medium-rare.
  • Let the beef rest for about 5 minutes before slicing thinly.

Making the Béarnaise Sauce

  • In a small saucepan, combine the white wine, vinegar, and half of the tarragon. Simmer until reduced by half, then remove from heat.
  • In a mixing bowl, whisk together the egg yolks and the reduction until thick and creamy.
  • Gradually whisk in the melted butter until fully combined. Finish with the remaining tarragon.

Assembly

  • On each crostini, place a slice of grilled beef, then drizzle with the Béarnaise sauce.

Notes

Don’t stress about the sauce! If it doesn’t come out perfectly the first time, focus on flavor. Pair with a nice red wine like Cabernet Sauvignon for the perfect meal.
