For the Pie

  • 1 pre-made pie crust 1 pre-made pie crust Feel free to use a store-bought crust; we won’t judge!
  • 1.5 cups 1 ½ cups sweetened shredded coconut Because who doesn’t love coconut?
  • 1 cup 1 cup sugar Just the right amount of sweetness!
  • 0.5 cups ½ cup milk or coconut milk for that tropical twist
  • 4 eggs 4 eggs They’re the glue that holds this deliciousness together!
  • 1 teaspoon 1 teaspoon vanilla extract Because life is too short for boring flavors
  • 1 tablespoon 1 tablespoon butter A little bit of richness never hurt anyone!

Preparation

  • Preheat your oven to 350°F (175°C).
  • Take the pre-made pie crust and place it in your pie dish. Trim and crimp the edges.
  • In a large mixing bowl, whisk together the sugar and eggs until smooth. Then add milk, vanilla, and melted butter. Stir well until everything is combined nicely.
  • Gently fold in the shredded coconut.
  • Pour the coconut mixture into the prepared pie crust.

Baking

  • Bake in the oven for about 30-35 minutes or until the top is golden brown and firm to the touch.
  • Once baked, let your pie cool at room temperature before slicing.

Serving

  • Enjoy warm or chilled, with whipped cream on top, fresh fruit, or a scoop of vanilla ice cream.

Notes

For extra crunch, use sweetened flaked coconut instead of shredded. Add chocolate shavings or caramel sauce for more indulgence.
