  • 1 pound cubed steak (or round steak)
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup buttermilk the secret to extra moistness
  • 1 cup cooking oil (vegetable or canola) for frying

For the Homestyle Gravy

  • 1/4 cup flour for thickening the gravy
  • 2 cups milk
  • Salt and pepper, to taste

Preparation

  • Season each piece of cubed steak with salt and pepper. Let it sit for about 10-15 minutes.
  • Set up a dipping station with three bowls: flour in one, whisked eggs with buttermilk in the second, and leave the last one empty.

Battering and Frying

  • Coat each piece of steak in flour, dip in buttermilk and egg mixture, then return to flour for a final coating.
  • In a large skillet over medium-high heat, heat the cooking oil and gently add the battered steak in batches. Fry until golden brown, about 4-5 minutes on each side.
