  • 1 lb Brussels sprouts, trimmed and halved
  • 6 slices bacon, chopped
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (optional for extra crispiness)
  • Fresh parsley, chopped for garnish For presentation

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large oven-proof skillet, cook the bacon over medium heat until it’s crispy. Transfer the bacon to a plate lined with paper towels.
  • In the same skillet, add the halved Brussels sprouts cut side down. Drizzle with olive oil if desired. Sauté for about 5-7 minutes until golden brown.

Combining

  • Stir in the crispy bacon with the golden Brussels sprouts.
  • In a small bowl, whisk together the heavy cream and Dijon mustard, adding salt and pepper to taste. Pour the mixture over the Brussels sprouts and bacon.

Baking

  • Bake in the preheated oven for 10-12 minutes until everything is heated through and the cream is bubbly.
  • Remove from the oven and sprinkle with fresh parsley before serving.

Notes

Don't skip the bacon fat for flavor! If the cream looks lumpy, stir gently to smooth out. For a vegan version, substitute bacon with smoked tempeh and heavy cream with coconut cream.
