  • 1 cup shredded cheese (cheddar works wonders) Feel free to experiment with different cheeses.
  • 1/2 cup flour
  • 2 large eggs Whisked
  • 1 cup breadcrumbs (panko for extra crunch)
  • as needed cup Oil for frying (canola or vegetable)

Preparation

  • Prep your toppings: Crush the Doritos into a mix of larger and smaller pieces.
  • In a bowl, combine your shredded cheese. Optionally, add jalapeƱos or herbs for an extra kick.
  • Set up your assembly line: Place flour in one bowl, whisk eggs in another, and put breadcrumbs in a third.
  • Shape a small handful of cheese into a ball, dip it in flour, coat with eggs, and finally cover with breadcrumbs. Repeat until all cheese is coated.
  • Heat enough oil in a skillet over medium heat to cover the bottom. Once hot, fry the cheese balls until golden brown (about 3-4 minutes), flipping halfway through.
  • Transfer fried cheese balls to a paper towel-lined plate to drain excess oil. Allow them to cool briefly before serving.

Notes

Keep the oil hot enough to prevent cheese from leaking out while frying. Store leftovers in an airtight container in the fridge for up to 2 days; they freeze well if prepared in advance.
