Ingredients
  

For the Pie Filling

  • 2 cups peeled and diced apples or peaches (or a mix of both)
  • ½ cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

For the Dough

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • ½ cup unsalted butter, chilled and cubed
  • 6-8 tablespoons cold water

For Frying

  • Vegetable oil, for frying Enough to cover the bottom of the pan

Instructions
 

Making the Filling

  • In a medium bowl, combine your diced apples or peaches with sugar, cinnamon, and lemon juice. Set aside to let the flavors mingle while you whip up the dough.

Preparing the Dough

  • In another bowl, whisk together the flour, salt, and sugar.
  • Cut in the chilled butter until the mixture resembles coarse crumbs.
  • Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  • Wrap the dough in plastic wrap and let it chill in the fridge for about 30 minutes.

Assemble the Pies

  • Roll out the dough on a floured surface to about ¼ inch thick. Cut it into circles (about 4 inches in diameter).
  • Place a tablespoon of the fruit filling in the center of each circle. Fold the dough over and seal the edges with a fork.

Frying Time

  • In a heavy saucepan, heat enough vegetable oil to cover the bottom, about 2 inches deep, over medium heat.
  • Carefully add the pies, frying them in batches until golden brown on both sides, about 3-4 minutes.
  • Remove the fried pies and place them on paper towels to drain excess oil. Dust with powdered sugar while warm, if desired.

Notes

Feel free to mix and match the fruits. Add nutmeg for an unexpected warmth. If using a baking method, bake at 350°F (175°C) for about 25-30 minutes until golden.
