  • 3 cups diced apples (about 4-5 medium apples) Use tart apples like Granny Smith or crisp ones like Honeycrisp.
  • 2 cups granulated sugar Adjust sweetness based on apple variety.
  • 2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon Feel free to add a pinch more for extra flavor.
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional) Adds a delightful crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9x13 inch baking pan.
  • In a large mixing bowl, combine the sugar, oil, eggs, and vanilla extract. Mix until well combined.
  • Fold in the diced apples.
  • In another bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt.
  • Gradually add the dry ingredients to the apple mixture until just mixed. Be careful not to overmix.
  • If desired, fold in the chopped walnuts or pecans.
  • Pour the batter into the prepared baking pan and spread it out evenly.

Baking

  • Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for about 10-15 minutes before transferring it to a wire rack.
  • Cut into squares and enjoy with whipped cream or vanilla ice cream.

Notes

Store in an airtight container at room temperature for up to 3 days. You can also use frozen diced apples—drain any excess liquid first.
