  • 4 pieces boneless, skinless chicken breasts
  • 2 cups sliced mushrooms (button or cremini)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 whole onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Chop the onion and mushrooms.

Layering

  • Place the chicken breasts at the bottom of your crockpot.
  • Sprinkle the minced garlic, diced onion, and sliced mushrooms on top.

Mixing the Sauce

  • In a separate bowl, mix the cream of mushroom soup with chicken broth, thyme, salt, and pepper.
  • Pour this creamy mixture over the chicken and veggies and give it a gentle stir.

Cooking

  • Cover and cook on low for 6-7 hours or high for 3-4 hours.

Serving

  • Plate the chicken with a generous helping of the creamy sauce over cooked rice or mashed potatoes.
  • Sprinkle freshly chopped parsley for garnish.

Notes

Use canned mushrooms if short on time. Add white wine or veggies for variation.
