Main Ingredients

  • 6 medium medium potatoes, peeled and diced
  • 1 unit onion, chopped
  • 2 stalks carrots, diced
  • 2 stalks celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream Use cream for a richer taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese (optional) Cheese adds extra flavor!
  • to taste Green onions for garnish Optional

Instructions
 

Preparation

  • Peel and dice the potatoes, chop the onion, and dice the carrots and celery.
  • Toss the diced potatoes, onion, carrots, and celery into the slow cooker.

Cooking

  • Pour in the chicken or vegetable broth, ensuring the veggies are submerged.
  • Sprinkle in the garlic powder, onion powder, salt, and pepper. Stir to combine.
  • Cover the crock pot and cook on low for about 6-8 hours or on high for about 4 hours.

Finishing Touches

  • When cooking time is up, gently mash some of the potatoes with a fork or potato masher for creaminess.
  • Stir in the milk or cream until your soup reaches a luscious consistency.
  • If desired, add in the shredded cheese and stir until melted.
  • Ladle the soup into bowls, top with chopped green onions if using, and serve.

Notes

Feel free to add in your favorite vegetables or meats. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. If the soup is too thick, add more broth or milk to thin it out.
