  • 2 cans butter beans, drained and rinsed
  • 3 tablespoons butter for creaminess
  • 3 cloves garlic, minced
  • 2 tablespoons capers, rinsed and drained
  • 1 large lemon, zest and juice this is where the magic happens
  • to taste salt and pepper
  • a handful fresh parsley, chopped for garnish
  • optional crusty bread for dipping

Cooking Instructions

  • In a large skillet, melt the butter over medium heat.
  • Once the butter is frothy, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it brown.
  • Stir in the butter beans and capers. Season with salt and pepper, stirring well.
  • Add the zest and juice of the lemon, cooking for another 2-3 minutes to meld the flavors.
  • Remove from heat, garnish with fresh parsley, and serve hot.

Notes

You can use white beans or chickpeas as substitutes if needed. For added greens, toss in some spinach at the end. Store leftovers in an airtight container in the fridge for up to three days.
