For the Cowboy Butter Lobster Tails

  • 2 pieces lobster tails
  • 1/2 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped for presentation
  • 1 teaspoon lemon juice adds zest
  • 1 teaspoon smoked paprika for flavor
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 425°F (218°C).
  • Place the lobster tails on a cutting board and carefully cut the top of the shell down the middle, leaving the bottom shell intact.
  • In a small bowl, whisk together melted butter, minced garlic, chopped parsley, lemon juice, smoked paprika, salt, and pepper.
  • Place the lobster tails on a baking sheet and generously spoon the Cowboy Butter mixture over the exposed lobster meat.

Cooking

  • Bake the lobster tails in the preheated oven for 12–15 minutes, or until the meat is opaque and cooked through.
  • Once done, drizzle any leftover butter over the lobster and sprinkle with more parsley. Serve with lemon wedges.

Notes

For a lighter version, substitute olive oil and lemon juice for butter. Leftover lobster can be added to salads or pasta.
