Ingredients
  

For the Cookies

  • 1 cup unsalted butter, softened Make sure it is at room temperature.
  • 1 cup brown sugar Packed.
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature.
  • 2 teaspoons vanilla extract Pure preferred.
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semi-sweet chocolate chips Use high-quality chocolate chips for best results.

For the Cheesecake Filling

  • 8 oz cream cheese, softened At room temperature.
  • 1/3 cup granulated sugar
  • 1 large egg Room temperature.
  • 1 teaspoon vanilla extract Pure preferred.

Instructions
 

Make the Cheesecake Filling

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the sugar, egg, and vanilla extract, and mix until fully combined and creamy.
  • Set aside.

Prepare the Cookie Dough

  • In another large bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until fluffy.
  • Beat in the eggs one at a time, followed by the vanilla.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the chocolate chips.

Assemble the Cookies

  • Preheat your oven to 350°F (175°C).
  • On a baking sheet lined with parchment paper, scoop a tablespoon of cookie dough and flatten it slightly.
  • Add about a teaspoon of the cheesecake filling in the center, then top with another tablespoon of cookie dough to cover the filling.
  • Gently roll it into a ball and place it back onto the baking sheet. Repeat with the rest of your dough.

Bake and Enjoy!

  • Bake in your preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Chill the dough for about 30 minutes before baking for best texture. Don’t overmix the dough to keep cookies tender. Consider adding a splash of lemon juice to the cheesecake for a zesty twist.
