Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs Room temperature
  • 1 cup whole milk Can substitute with almond or soy milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Essential for moisture

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix to combine.
  • Add the eggs, milk, oil, and vanilla extract to the dry mixture. Stir until just combined.
  • Add the boiling water to the batter. Mix gently until incorporated.
  • Pour the batter into two greased 9-inch round cake pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  • Frost with your favorite chocolate frosting or serve plain.

Notes

For added texture, feel free to mix in chocolate chips. Store leftovers in an airtight container for 3-4 days. You can also freeze the cake for up to 3 months.
