Ingredients
  

For the Rolls

  • 1 pound breakfast sausage (your favorite kind)
  • 8 slices thick-cut bread (think Texas toast!)
  • 4 large eggs
  • 1 cup milk
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar more can be added if desired
  • Butter (for cooking)

Instructions
 

Preparation

  • In a skillet over medium heat, brown the sausage until fully cooked. Once done, transfer it to a plate and set aside.
  • In a large mixing bowl, whisk together the eggs, milk, cinnamon, vanilla extract, and brown sugar until well combined and fluffy.
  • In the same skillet, melt a bit of butter over medium heat. Dip each slice of bread into the egg mixture, ensuring it’s fully coated. Cook each side until golden brown.
  • Lay one sausage link at one end of a toasted slice and roll it up tight. Repeat with the remaining slices and sausages.
  • Melt more butter in the skillet and toast each roll seam-side down until slightly crispy.

Serving

  • Stack your Cinnamon French Toast Sausage Rolls on a plate, drizzle with maple syrup, and sprinkle a bit more cinnamon on top.

Notes

Make the sausage rolls the night before and reheat them for convenience. Consider adding powdered sugar or fresh fruit for garnishing. Don't skimp on syrup!
