  • 1 cup unsalted butter, softened 2 sticks
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chopped nuts (walnuts or almonds) Optional, can substitute with dried cranberries or crushed peppermint.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar.
  • Beat in the eggs one at a time, and then stir in the vanilla extract.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry mixture to the butter-sugar mixture, stirring until well combined to form a thick dough.
  • Gently fold in the chocolate chips, mini marshmallows, and chopped nuts.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
  • Bake for about 10-12 minutes, or until the edges look set.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

To keep cookies soft, store in an airtight container with a slice of bread. For variations, try using white chocolate chips or drizzling melted chocolate on top.
