  • 1 pound smoked sausage, sliced
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • ¼ cup olive oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the halved baby potatoes with olive oil, ranch seasoning mix, salt, and pepper. Toss until the potatoes are well-coated.
  • Add the sliced smoked sausage to the potato mixture. Toss again until well mixed.
  • Transfer the potato and sausage mixture onto a large baking sheet, spreading them out in a single layer.

Cooking

  • Roast in the preheated oven for about 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through.
  • Sprinkle the shredded cheddar cheese over the hot mixture and return to the oven for 5-10 minutes until melted and bubbly.
  • Remove from the oven, let cool for a minute, and garnish with fresh parsley before serving.

Notes

Customization is key: swap out the sausage for chicken or mix in roasted veggies for a vegetarian option. For a kick, add diced jalapeños or red pepper flakes. Line your baking sheet with parchment paper for easier cleanup.
