Ingredients
  

For the filling

  • 2 large large potatoes, peeled and diced (about 1 pound)
  • 1 cup shredded cheese (cheddar works wonders!)
  • 1/2 cup sour cream (the extra creaminess makes a difference!)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper
  • 4 large flour tortillas
  • Optional: diced green onions or cooked bacon for an added punch!

Instructions
 

Cooking the Potatoes

  • Boil the diced potatoes in a large pot of salted water until they're fork-tender (about 10-12 minutes). Drain and let them steam dry for a minute.

Mixing the Filling

  • Mash the tender potatoes in a mixing bowl. Add shredded cheese, sour cream, garlic powder, salt, and pepper. Mix until creamy. Optionally, add green onions or bacon bits.

Wrapping the Burritos

  • Lay a tortilla flat and spoon 1/4 of the cheesy potato mixture down the center. Fold in the sides and roll it up tightly. Repeat with the remaining tortillas and filling.

Toasting the Burritos

  • Heat a non-stick skillet over medium heat. Place the burritos seam-side down and cook for about 2-3 minutes per side until golden and crispy.

Serving

  • Slice the burritos in half, serve with sour cream or salsa, and enjoy.

Notes

You can substitute potatoes with leftover meat or veggies. Make a double batch and freeze for quick meals. Get the kids involved in wrapping for a fun family activity.
