Ingredients
  

For the Sweet Potatoes

  • 2 large sweet potatoes, peeled and diced
  • 3 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • to taste Salt and pepper

For the Topping

  • 1/2 cup crumbled feta cheese
  • 1/2 cup walnuts, rough chopped
  • to taste Fresh parsley, for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the diced sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper. Toss until they are well-coated.

Cooking

  • Spread the sweet potatoes on a baking sheet in a single layer. Roast for about 25–30 minutes, flipping halfway through.
  • After 20 minutes, add the chopped walnuts to the baking sheet and continue roasting.
  • Once everything is beautifully roasted, take the potatoes and nuts out of the oven and sprinkle crumbled feta cheese on top.
  • Serve warm, garnished with fresh parsley if desired.

Notes

For sweet potato alternatives, try butternut squash or carrots. For a nut-free version, omit walnuts or use crispy chickpeas. Store leftovers in an airtight container in the fridge for up to three days.
