  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Fresh herbs (like parsley or chives) for garnish

Preparation

  • Season the short ribs generously with salt and pepper.
  • In a heavy pot or Dutch oven, heat the olive oil over medium-high heat.
  • Sear the short ribs on all sides until beautifully browned.
  • Add the diced onion and minced garlic, stirring until softened.
  • Pour in the beef broth, scraping the bottom of the pot to deglaze.
  • Stir in the Dijon mustard, Worcestershire sauce, thyme, and rosemary.
  • Bring to a simmer, reduce heat, cover, and braise for 2-3 hours until tender.
  • Remove the ribs from the pot and stir in the heavy cream.
  • Let the sauce simmer until thickened, then serve the ribs with the sauce over them.
  • Garnish with fresh herbs before serving.

Notes

Do not skimp on searing for depth of flavor. A heavy pot ensures even cooking. Use a pressure cooker to speed up cooking time without compromising flavor.
