  • 2 fillets salmon fillets (about 6 oz each)
  • 1 bunch asparagus

Garlic Lemon Butter Sauce

  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 juice Juice of 1 lemon Plus lemon slices for garnish
  • 1 teaspoon dried oregano Or dill if preferred
  • Salt and pepper to taste

  • Aluminum foil for wrapping Essential for sealing in moisture

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Tear off two large sheets of aluminum foil.

Assembling

  • Place the salmon fillets at the center of each foil sheet. Surround with asparagus spears.

Making the Sauce

  • In a small bowl, mix melted butter, minced garlic, lemon juice, oregano, salt, and pepper.
  • Drizzle the sauce over the salmon and asparagus.

Packaging

  • Fold the sides of the foil over the salmon and asparagus to create a sealed packet.

Baking

  • Transfer the foil packets to a baking sheet and bake for 15-20 minutes or until the salmon flakes easily with a fork.
  • Optional: Open the packets for the last 2-3 minutes for a crispy finish.

Serving

  • Carefully open the foil, garnish with extra lemon slices, and serve.

Notes

Switch up asparagus with other veggies like broccoli or zucchini if desired. This dish is great for meal prep; store leftovers in an airtight container in the fridge for up to 2 days.
