Ingredients
  

For the pudding mixture

  • 1 cup heavy cream For whipping
  • 1/2 cup Baileys Irish Cream Can be substituted with flavored liqueur
  • 1 package (3.9 oz) instant chocolate pudding mix
  • 2 cups whole milk
  • 1/2 teaspoon peppermint extract Adjust to taste for mint level

For the decoration

  • 1/4 cup chocolate shavings For topping
  • to taste Whipped cream Store-bought or homemade

Instructions
 

Preparation

  • In a medium bowl, whisk together the instant chocolate pudding mix and milk until smooth (about 2 minutes).
  • Stir in the Baileys and peppermint extract to the pudding mix.
  • In another bowl, beat the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the chocolate mixture until blended.
  • In individual glasses or bowls, layer the chocolate mint pudding mixture, followed by a dollop of whipped cream and chocolate shavings. Repeat layers.
  • Cover parfaits with plastic wrap and refrigerate for at least 2 hours before serving.

Serving

  • Add a final topping of whipped cream and more chocolate shavings before serving.

Notes

For an alcohol-free version, substitute Baileys with additional peppermint extract. Can be made ahead of time; they taste better after chilling.
