  • 1 pound ground beef (80/20 is ideal for flavor)
  • 1 cup crushed saltine crackers (or breadcrumbs for a twist)
  • 1 cup shredded cheddar cheese don’t skimp on this!
  • 3 strips bacon, chopped because everything’s better with bacon
  • 1 small onion, finely chopped
  • 1/4 cup ketchup plus more for topping, if you like
  • 1 tablespoon Worcestershire sauce
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, crushed saltine crackers, half of the cheddar cheese, chopped bacon, onion, ketchup, Worcestershire sauce, egg, garlic powder, salt, and pepper. Mix with your hands.
  • Shape the mixture into a loaf and place it in a baking dish.
  • Spread a layer of ketchup on top of your meatloaf and add extra cheese if desired.
  • Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  • Let the meatloaf rest for about 10 minutes before slicing.

Notes

Avoid overmixing the ingredients to prevent a dense loaf. You can also add cooked bacon bits for extra flavor. Using a meat thermometer ensures it’s cooked through without drying it out.
