  • 1 lb ground beef
  • 1/2 lb bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk
  • 3 large eggs
  • 1 cup frozen tater tots or any preferred hash browns
  • 2 tbsp ketchup
  • 1 tbsp mustard

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the bacon over medium heat in a large oven-safe skillet until crispy. Remove it, leaving the drippings in the pan.
  • In the same skillet, add diced onion and cook until softened, about 3–4 minutes. Then, add the ground beef and cook until browned. Drain any excess fat.
  • Mix in the cooked bacon, reserving half for topping. Stir in the ketchup, mustard, salt, and pepper until well combined.
  • In a bowl, whisk together milk and eggs until smooth.
  • Layer the beef-bacon mixture evenly at the bottom of the skillet. Add a layer of tater tots on top, then pour the milk-egg mixture to seep down.
  • Top with shredded cheddar and mozzarella cheese.

Cooking

  • Bake for 30-35 minutes, or until the cheese is bubbling and golden.

Notes

Ingredient swaps: If you can't find tater tots, try hash browns or cooked pasta! For an extra crispy top, broil for an additional 2–3 minutes, watching closely to avoid burning. You can prep the beef mixture a day ahead and just bake it when ready.
